Christmas Retrospective 4

Nine people, five dogs, one ham, one goose, two and a half dozen sweet potato biscuits, three cups (before cooking) rice, one head of cauliflower au gratin, one quart goose gravy, one tin cheese straws, three bottles of wine, two sweet potato pies, one lemon chess pie, one notification of impending grandchild.

And no more cooking this week.

    Half the ham, but that’s to be expected from a 13 pound country ham. I had ham and grits with red eye gravy for breakfast yesterday and look forward to many more enjoyable sessions with the ham.

    Was able to get only one meal out of the goose, and Second Son took the leftover stuffing and half the biscuits.

    I’m actually having to cook something fresh tonight.

    I know what grits are. Chris eats them. Puts the stuff in a bowl, adds hot water, & stirs. But what, may I ask is, ‘red eye gravy’? Country ham? Is this different from the shank portion? I was raised in Texas, but by a family from Ohio. Would that stuff be otherwise known as “country cooking”?
